El café etíope de Fikadu Lege es una joya en el mundo del café de especialidad, cultivado en las tierras de este pequeño caficultor, con no más de 2 hectáreas, ubicado en las altas montañas de Yirgacheffe, a 2,050 metros sobre el nivel del mar. Este café, cosechado frescamente en la temporada 2024, representa la principal fuente de ingresos de Fikadu y su familia, quienes también cultivan bananas, aguacates y otras hortalizas para su consumo diario.
Fikadu dedica cada año su esfuerzo y conocimientos al cuidado de sus plantas de café, recogiendo los granos solo en su punto óptimo de maduración, entre octubre y enero. Desde la Finca Los Jilgueros, Armando Peralta Gutiérrez nos presenta este excepcional café de especialidad de Nicaragua, de la variedad bourbon rojo y con un proceso natural que alcanza los 86 puntos SCA. Armando, quien heredó las tierras de su padre Salvador Peralta, decidió plantar las variedades bourbon y caturra en altitudes de 1250 a 1400 metros, respetando siempre los métodos tradicionales para resaltar el sabor único de este café.
El café es recolectado a mano en su punto óptimo de maduración y procesado con un método único que combina tradición y calidad. Armando comparte su meticuloso proceso, que incluye sifoneo manual para eliminar granos secos o cerezas vanas, seguido de un reposo de 16 horas en cajas de madera en beneficio húmedo y un secado lento al sol nicaragüense durante 25 a 30 días. Este cuidado en cada etapa del proceso de beneficio permite que el café desarrolle un sabor profundo y un cuerpo excepcional.
Este café nicaragüense, de la variedad bourbon rojo, no solo refleja la herencia cafetera de la familia Peralta, sino también el compromiso de Armando con la calidad y la tradición en cada grano.
