As in the wine and craft beer industries, specialty coffee seeks to offer a variety of flavors and aromas that distinguish one brand from another. This is achieved thanks to improvements in cultivation and processing techniques, as well as innovation throughout the production chain.

At first glance, a specialty coffee can be identified by the characteristics of its packaging. If it has a non-return valve, roasting date and details about its origin and characteristics, it is probably a specialty coffee. On the other hand, conventional coffees usually lack this information and are vacuum packaged.

Additionally, the smell can be indicative of the quality of the coffee. Specialty coffees typically have bright, natural aromas, while conventional coffees may have artificial scents. In the case of the degree of roasting, specialty coffees tend to have a lighter color, as the aim is to highlight the natural flavors of the bean. Also, the grind is usually adjusted to specific preparation methods, unlike conventional coffees that have a generic grind.

Specialty coffee is differentiated from conventional coffee by its superior quality, sustainable growing methods, careful processing, distinctive packaging and variety of unique flavors and aromas.

Specialty coffee beans come primarily from the tropics, originating in central and eastern Africa. Throughout history, coffee cultivation has spread throughout the world due to migrations, imperialist expansion and colonialism. Today, coffee plantations are found in the tropical zone, between the tropics of Cancer and Capricorn. However, coffee plants have species-specific preferences, and only a few species have been widely marketed, with Arabica and Robusta being the best known.

Arabica is valued for its aromatic properties and is the most sought after in the world of specialty coffee due to its sweet flavors and attractive aromas. On the other hand, Robusta is known for being resistant to diseases and inclement weather, although its fruits are not as rich in flavor as those of Arabica.

Regarding the geographical distribution of coffee plantations, they are found on several continents. Most specialty coffee beans come from Africa, Central and South America, as well as Asia. Each region has its own soil, climate and altitude characteristics that influence the flavor and quality of the coffee produced.

Specialty coffees are classified using an analysis and evaluation tool developed by the SCA. This tool considers various coffee characteristics, such as aroma, flavor, aftertaste, acidity, body, balance, cleanliness, uniformity, and an overall score. Based on the results of this evaluation, the coffees receive a score that determines their category:

  • Less than 80 points: It is not considered specialty coffee.
  • Between 80 and 84 points: Good quality specialty coffee.
  • Between 85 and 89 points: Excellent specialty coffee.
  • Between 90 and 99 points: Exceptional specialty coffee.

The roasting process of specialty coffee beans is adapted to their final destination, whether to prepare espresso or filter, thus ensuring an optimal experience for the consumer.

The term "freshly roasted coffee" is a symbol of quality, indicating that our beans are roasted weekly to ensure they reach you at their optimal point of freshness and quality. The roasting date is crucial, since after this process the coffee maturation stage begins, during which the gases produced during roasting are expelled.

This maturation period can last up to six months, but the coffee reaches its optimal flavor and aroma between the first week and four weeks after roasting, depending on climatic and storage conditions. It is advisable to consume coffee beans within a month to ensure freshness, while ground coffee oxidizes faster and should be used within a maximum of three weeks, storing it properly to preserve its quality.

Drinking coffee at its optimal moment will help raise its full potential and know that our coffees, which have no preservatives or sugars, go off little by little.

Before adding your coffee to the basket. Select your filtering method from the available options depending on your coffee maker. This way we grind it to taste so that the results in the cup are the most appropriate.

Each preparation method has its own characteristics and specific times. For example, espresso requires between 20 and 40 seconds of extraction, while filter coffee can vary from 3 to 7 minutes depending on the recipe. Additionally, freshly ground coffee offers a variety of flavors, from fruity and tart to sweet and chocolatey, with the greatest amount of caffeine extracted in the first few seconds of extraction.
